Sweet Sticky Rice Cookie

Ingredients (for 8 pieces)

  • Glutinous rice flour – 150 g
  • Sesame – 25g
  • Soft brown sugar – 8 teaspoon
  • Water – 200 ml

Direction

  1. Heat water first and add the brown sugar into the water. Put it aside for mixing the flour once the sugar is melted.
  2. Add the 120 g glutinous rice flour into a bowl. Then gradually add several spoons of hot sweet water into the flour. Mix it.
  1. Mix the flour and sugar water into a dough like this.
  2. Divide the dough into 8 portion. Then knead the portion into a ball
  3. Put the ball on the sesame and roll it. Afterward, press it to shape into a cookie
  4. Heat the oil in a deep fry pan. You can put a bamboo stick to test the temperature of the oil. If there is a bubble pop along the bamboo stick, the temperature is appropriate to deep fry the cookie. Then you adjust the heat level into low level (slightly lower than medium).
  5. Place the dough into the deep fry pan. And flip the cookie frequently until it become golden yellow. Then, it is done. Ready for serving.
