Taiwanese Salty Chicken

Taiwanese salty chicken is one of the very famous hawker foods in the night markets in Taiwan. It is very great when you make it as a starter, some snack for your drink or a main course in your veggie menu.

Ingredients (2 servings)

  • Oyster king mushroom (medium size) – 3-4 pieces
  • Olive oil – 1 teaspoon (for marinating)
  • Olive oil – 8-10 teaspoons (for frying)
  • Sesame oil – 1 teaspoon (for marinating)
  • Garlic – 5 cloves (for marinating)
  • Soya sauce – 2 teaspoons (for marinating)
  • Five spice powder – 1 teaspoon (for marinating)
  • Rice wine – 2 teaspoon (for marinating)
  • Corn powder – 1 teaspoon (for marinating)
  • Sugar – 1/4 teaspoon (for marinating)
  • Cake flour – around 80 g
  • Basil leaves – 2-3 pieces (for decorating) 

Direction

  • Boil water. Blanch oyster king mushroom for 2 minutes. Squeeze the excessive water out of the mushrooms
  • Mince garlic 
  • Cut the oyster king mushroom into triangle shape
  • Slight scratch it like tic-tac-toe on the two surfaces 
  • Marinating them into the marinating sauces by mixing olive oil, sesame oil, garlic, soya sauce, five spice powder, rice wine, corn powder, and sugar
  • Put the mushrooms on the cake flour in a plate so that the surface of mushrooms are put with all cake flour. Then, put the them back into marinating sauce and put them on the cake flour again.
  • Heat olive oil in a deep fry pan
  • Fry them into golden yellow colour with medium fire
  • Put them into a beautiful plate once it becomes golden yellow colour. Put a basil leaves on the top of them. It is done. Ready for serving.
